THE FRAGRANCE OF CA’ D’OR

 

Soave DOC Pagus is a perfect overture to a warm spring evening which ends up in a woody freshness of bucolic notes.

 

Gently mineral and fruity, Soave DOC Pagus it’s an ideal wine for aperitifs based on shellfish and raw fish. Exotic nuances make it an ideal partner of sushi and sashimi. It’s a fresh and well-structured wine, and smell is reached by intense fragrance of citrus and tropical fruits with yellow flesh.

At first glance:
Straw yellow with greenish reflections

On the nose:
Mineral, with slight sensations of yellow citrus and yellow pulp fruits.

It’s structured with an interesting freshness and a good flavour of citrus fruits with exotic hints. Delicately mineral with a good taste

Accompaniments:
Perfect as an aperitif and with starters as well as shell and raw fish. Particularly interesting with white fish, sushi and sashimi

Ripasso Nero Viola

THE TRADITION OF CA’ D’OR

 

Ripasso Nero Viola is aged in 500/1000 l oak barrels for 18 months and is a wine that stands out for its distinctive softness. Its sweet and fruity notes come from a skillful blend.

 

Softness and smoothness enhance the typical features of the whole range of red berry fruits, such as cherry and currant.

Grape varieties: 65% Corvina, 15% Corvinone + 10% Rondinella + 10% other varieties

Location: 12 hectars located in Bastia, exactly on the valley between the Val d’Alpone and Val d’Illasi. The shaley clay – subalkaline land, is formed in a broad plateau with slight slopes, produced by the alteration of limestone formations and in particular the white and red scales. The volcano (basalt) is non-existent

Vine age: New plantings and old one of 20-35 years

Vines per hectare: 5.200

Production: 60 – 70 Hl/Ha

Harvest: Hand picked during the last two weeks of September

Fermentation and maturation: Ripasso is the traditional method where the Valpolicella wine is re-macereted on the pomace from the dried Amarone grapes. The wine is aged in 500/1000 lt oak barrels for 18 months.

Valpolicella Nero Rubino gives off delicate perfumes of almonds and pansy. To the palate the taste is dry, soft and well-structured.

 

It’s a harmonious and complex wine that surprises for its intense and persistent perfume. The result is a ruby red wine with strong character, intense and ethereal fragrance and round and velvety taste.

Amarone Nerofosco Ca D’Or

THE PASSION OF CA’ D’OR

 

Amarone Ca’ d’Or is a timeless wine. Aged in wood for 30-36 months, it comes out opulent and of refined elegance that ignites the palate and the eye with its reflections of ruby intense.

 

It is born in the village of Bastia, on the watershed between Val Alpone and Val d’Illasi, on a large plateu. Perfect harmony between time and nature, this Amarone is the fruit of Ca ‘d’Or elegance.

Harvest: Hand picked during the last two weeks of September and lay to dry in small boxes in “fruttaio”

Fermentation and maturation: The grapes are allowed to dry gently in well-ventilated rooms for around 4-5 months, concentrating their flavours, sweetness and colour. In winter, the grapes are crushed, fermentation starts with natural yeast and then the must is filled into 500-1000 lt oak barrels to finish fermenting. The wine matures in wood for 30-36 months before bottling
